What makes Jamaican Blue Mountain so special? Did you know that only 0.1% of the world’s coffee makes up Jamaican Blue Mountain?? It’s true! It is the champagne of the coffee beans! Each bean is checked for quality before being shipped to us. The growing conditions on the Blue Mountain farms also create a sought after, well-known, high quality coffee bean with the highest altitude and greater tree coverage. This tree coverage allows for the coffee beans to mature longer increasing the strength and pervasiveness of the rich flavors.

Our sun-dried Jamaican roast has many wonderful qualities, including a certain, appealing brightness to its taste. The coffee beans carry sweet, complex undertones of chocolate and fruit that are accompanied by a wonderful nuttiness and a lingering, pleasant aftertaste that will make you want to take another sip of your delicious coffee. The medium roast has a creamy, smooth texture with a lovely aroma and perfectly balanced body. It is the perfect pick-me-up at any time of the day!

I would suggest using a French Press or pour over, as both allow adequate steeping time to draw out the flavors, while not increasing the acidity. Remember to pay attention to grind size before brewing, since the wrong grind size can change your entire experience.

Quick French Press Tips:

1. Use coarse grinds.
2. Heat water until it’s just boiling.
3. 2 Tbsp. ground coffee to 8 oz. water ratio
4. Steep for 4 minutes.

Quick Pour-Over tips:

1. Use Medium- coarse grinds.
2. Heat water just until boiling.

Learning from a Master Roaster

My husband and I flew to the Island of Hawaii’ for the Kona Coffee Cultural Festival in November.  While we were there, we participated in coffee farm tours and purchasing green Kona coffee beans that I roasted right there on the Oka Family Farm!  We became friends with the Oka family and were fascinated with their story of four generations running the family farm.  They graciously invited us to use their Ashe Fluid bed roaster to roast the beans while overlooking the Pacific Ocean!  What a treat!  Please enjoy watching the video below as I learn from the master roaster, Keola Oka the proper way to roast these rare and precious beans!  I would also like to note that the Oka Family Farm was awarded the prestigious 50th annual Kona Coffee Cultural Festival’s “Chef’s Award”  We are passionate about coffee and search to only bring our customers the creme’ de la creme’ of the coffee beans that we source from all over the world!

Jill, an Amazing Woman, Friend, Avid Equestrian

2021…. Jill, an amazing woman, friend, avid equestrian. A rough year for most of us. We lost a dear friend last week. Not only a friend but an incredibly accomplished woman. One of the artisans to my company. She was even more talented than I knew! She NEVER told me of all the many talents she possessed. One of the things I respect her for even more! Not only was she a hunter/ jumper, trail riding, horse loving, family adoring woman…. And there is so much more! A chef, funny, kind, adventurous…. I’ll try anything once, gal!

There won’t be anymore beautiful bareback rigging ‘saddles’ or hand- crafted saddle bags that she made for me. She is in a beautiful place where there is no more pain, no more suffering. She is with our Lord in heaven, where there are beautiful horses, two of mine…. Momma & Bandit, and I know she is riding them and loving on them in the most vibrant green pastures!

Thank you, Jill for always being kind when I was ignorant of your knowledge of horses! Happy trails, beautiful woman! Happy trails! Until we meet again!

Aren’t we all a bit nostalgic? I love small towns, mine is Whitehouse, Texas. Do you ever miss the ‘old days’ of small towns where everyone knows your name? I do too!

Tonight we enjoyed “Christmas in the Park” in Whitehouse, Texas. Going back into the past of small town gatherings. Christmas Parade with floats representing FFA Old time Farmall tractors that were refurbished like the one my grandfather owned, which had been painstakingly refurbished by my daddy.

Church floats with Nativity is what Christmas is all about! Pom Pon Squads doing their routines. And of course, Fire Trucks with Santa waving at the crowd, with the finale of the lighting of the Christmas tree in the park. A Christmas movie on the big screen, like the old time drive in movies.

It felt good to have some normalcy and joy remembering the reason for the season. It has been a rough year, 2020, and I think everyone enjoyed the way life was before COVID.

Cowgirl Elegance had a successful evening! Booths in the park filled with vendors selling their wares. It gave me excitement about Christmas and the gathering of families and making memories!

Bonfires & Hoodies – Autumn in Texas

My favorite time of the year in Texas is Autumn! We have an annual ‘ranch day’ where we invite family and friends to come down for a day of horseback riding, fishing, bonfires and brisket.

My cowboy is the master of the grill.. He has attended several cooking schools, which includes Myron Mixen and Johnny Trigg, both stars of the hit TV show “Pit Masters” works for me! more horse time!

Our horses are truly part of our family. Horses are as many of you know, ‘fight or flight’ animals and are typically frightened by fire and will avoid it BUT, our horses love hanging out at the bonfire with us! My mother used to be frightened of all horses, and a bit apprehensive about being around them, but Cody, Lucy and Bandit slowly removed her fear and changed her opinion and over time a trust and love replaced her anxiety. She now loves our horses and you will find a bag of carrots or homemade oatmeal cookies in the car when they come over for her ‘horse babies’;They kept coming up to her and nuzzling her as she sat and watched the fire.

Horses are so therapeutic in so many ways, they are very intuitive and nurturing. I experience this every day as I work with, care for them and love on them.

It has been fun watching my daddy relive his childhood memories with horses. It had been probably 30 years since he had been on a horse and he picked up right where he left off! Like riding a bicycle.

Did I tell y’all that I love horses?

When my hubs and I want to go on a quick ride, we saddle up Lucy & Cody and take a ride to my sisters-in-law homes a couple properties down the road.

Well, this weekend, it was quite entertaining! We stopped by Pat’s home to see her project of re-painting the interior of her home and sit on the patio, as she always has some peach tea awaiting our arrival. We stepped inside for a moment to take a look at her project before walking out to sit for a bit on her patio.

To our surprise and entertainment, I Love LUCY and her sidekick, Cody, were helping themselves to her bird feeder LOL!

Y’all…. I can’t make this up haha! Enjoy!

Meet the Newest Members of Our Ranch!

Meet the newest members of our Ranch – Miss Chloe Rae and Lil’ Bit

We have cattle, and my husband saw the neighbor’s Border Collie, Jake, work our cattle last year.  He said it was like watching “dog ballet” versus brut strength and aggression. His dog made it look easy.

So I called him and asked that if he had puppies to give me a call.  I wanted ‘pick of the litter’ for my hubs.

He obliged. A few weeks ago, he called me and asked me to come over and chose one. I have always loved the “runt,” so I chose “Lil Bit”.

We had her for less than a day when he said “go choose one for yourself,” so I did! Miss Chloe Rae is my little truck buddy! I take her with me everywhere I go! She loves riding in the truck!

The girls do everything together! It’s adorable, and I’m so glad we have two. They make us laugh every day!

Did you know that Border Collies are considered to be the most intelligent of all domestic dogs? They naturally know how to herd cattle, and if you have never seen these dogs work, be sure to take a look at it! It’s amazing how they inherently know their job!

Animals never cease to amaze me, each one beautifully and wonderfully made!
